Weddings are always fun and if you like to bake then there are many ways in which you can contribute to the wedding of a close family member or friend. In many societies cake is an integral part of a wedding, and the wedding ceremony is considered incomplete without a cake.
Ingredients
- Cake -
- Yellow cake mix - 1 package
- Buttermilk - 1-1/4 cups
- Egg whites - 4 eggs
- Icing -
- Reduced-fat cream cheese, cubed - 1 package (8 ounces)
- Milk (cold) - 1 cup
- Instant vanilla pudding mix - 1 package (1 ounce) sugar-free
- Frozen fat-free whipped topping - 1 carton (8 ounces)
- Flaked coconut - ½ cup (for garnish)
- Crushed pineapple - 2 cans (one 20 ounces, one 8 ounces) (for garnish)
Instructions
- Once you have purchased all the ingredients it is time to get to work.
- Your first task is to wash the bowl and then dry it with the help of a towel.
- Once the bowl is dry, you have to pour the cake mix, buttermilk, and egg whites into the bowl and then beat these ingredients with a mixer for about 30 seconds.
- If you are using an electric beater then you should set it on medium for about two minutes.
- Now leaving this mixture for a moment; take the baking pan, and then proceed to wash it as well and then dry it, to make sure that there are no water drops in or on the pan.
- You now have to spray the pan with cooking spray.
- Once it is coated with the cooking spray, you have to pour the cake batter mixture into this pan.
- Use a spoon to push the mixer from the edges of the bowl into the pan.
- Now take the pan and place it in an oven pre-heated at 350°, and bake for 25-30 minutes.
- Once the cake is baked, take it out of the oven while wearing baking mitts and let it cool down.
- In the meantime, you need to make the icing for the cake.
- For this, pour the cream cheese into a bowl, and then beat slowing while adding milk, pudding mix, and whipped topping.
- Once you have a fluffy mixture, stop beating and spread it over the cake.
- Top with crushed pineapple, and sprinkle with coconut.
- Now, place the cake in a refrigerator, and chill before serving at the wedding.
