Seitan is made from gluten, and is the main protein extracted from wheat - thus, it is often also referred to as "wheat meat", or "wheat gluten". Used in vegetarian recipes as a popular substitute for meat, seitan is easy to make, extremely nutritious and satisfying, and can be used in a number of dishes, and cooked in a variety of ways.
Ingredients
  • Vital wheat gluten - 1 cup
  • Water or vegetable broth - Approx. ¾ cup
  • Soy sauce - 2 tbsp
  • Ginger powder - 1 tsp
  • Garlic powder - 1 tsp
  • Broth for cooking - 6 cups
  • Onion (optional) - 3-4 slices
  • Fresh ginger (optional) - 2-3 pieces
Instructions
  1. First of all, take a bowl and put the gluten flour and dry spices in it.
  2. Mix both the ingredients with each other.
  3. Take another bowl and mix water or broth with soy sauce in it - put this aside.
  4. Then, pour the wet ingredients into the dry ingredients.
  5. Keep stirring with the help of spoon.
  6. After a few minutes, you will have to mix all the ingredients with your hands as the material will become quite thick.
  7. Please keep in mind that you can't use an electronic mixture as it will make the gluten very rubbery.
  8. You can add some more water if you feel the need.
  9. Now, you have to knead the seitan for around ten to fifteen times.
  10. Set it aside for around five minutes and then knead again a few more times.
  11. Make three to four ball-shaped small pieces of the gluten.
  12. Then, press each ball with your palm to make it a flat cutlet i.e. around ¾ inches thick.
  13. It is better to keep the cutlet as thin as possible as gluten expands while cooking.
  14. Put the seitan into a pot; pour in the broth for cooking, and add some more spices to it.
  15. You can use some poultry seasoning to add some flavour to the seitan.
  16. Add some ginger and onion slices, and cover the pot.
  17. Place the pot on the stove over low heat, and cook for about an hour or a little bit more.
  18. After cooking, turn off the heat and put the pot aside for a while so that it can cool down.
  19. Serve it along with bread or rice, and enjoy your meal.
