Hash brown casserole is one of the simplest casserole recipes and makes a great dish for the whole family. Simply sauté hash browns with onions and layer them in a casserole with sautéed sausages. Top the casserole with Parmesan and cheddar cheese and bake for 45 to 50 minutes. This recipe is usually served for dinner as the main course dish.
Ingredients
  • Butter - 3 tbsp
  • Yellow onion (chopped) - 1 small
  • Frozen shredded hash browns - 4 cups
  • Bulk sausage (mild, hot or sage) - 1 pound
  • Whole milk - 2¼ cups
  • Eggs - 8 large
  • Salt - 1 tsp
  • Black pepper - ¼ tsp
  • Freshly grated nutmeg - ¼ tsp
  • Dijon mustard - 2 tbsp
  • French or Italian bread (cubed, crusts removed) - 8 cups
  • Cheddar cheese (grated) - 2 cups (1/2 pound)
  • Freshly grated Parmesan cheese - 2 cups (1/2 pound)
Instructions
  1. Preheat oven to 350 degrees Fahrenheit.
  2. Take a deep 9x13 inch casserole dish, spray it with vegetable shortening and put it aside.
  3. If you don’t have vegetable spray, apply melted butter to the bottom and inner sides of the casserole.
  4. Melt three tablespoons of butter in a large frying pan, over low heat.
  5. Add chopped onion to the frying pan and sauté it over medium-low heat for 4 to 5 minutes or until soft and transparent.
  6. Now add the hash browns and break them apart with a cooking spoon.
  7. Sauté the hash browns for five minutes or until soft.
  8. In another frying pan, sauté the sausages, breaking apart large pieces.
  9. Remove the sausages from the pan once they are cooked through, about 3 to 5 minutes.
  10. Pour 2¼ cups of milk in a large mixing bowl. Break 8 eggs in the bowl and whisk to mix.
  11. Season the egg and milk mixture as you briskly blend it with salt, pepper, nutmeg and mustard.
  12. Now assemble all the ingredients in the prepared casserole.
  13. Start by spreading the onions and hash browns evenly at the bottom of the casserole.
  14. Then place the bread cubes evenly over the hash browns. Sausages will make the third layer of your hash brown casserole.
  15. Now pour the egg and milk mixture over the sausages.
  16. Top the casserole with a thick layer of cheese, sprinkling Parmesan cheese first and then cheddar cheese, saving a few tablespoons of the latter.
  17. Bake the casserole uncovered in the oven preheated to 350 degrees Fahrenheit for 45 to 50 minutes or until puffed and golden brown.
  18. Add a fresh topping of cheddar cheese 10 minutes before the recipe is ready.
