Scottish oatcakes have been eaten in Scotland as well as other parts of the world for centuries. For people who do not want to spend too much time cooking, this is an ideal recipe.
Ingredients
  • Medium oatmeal, plus extra for kneading - 125g
  • Bicarbonate of soda - ½ tsp
  • Salt - 1 pinch
  • Melted fat (goose or bacon) - 2 tbsp
  • Hot water - 1 tbsp
Instructions
  1. Turn on the oven and preheat it to 375 degrees Fahrenheit.
  2. If it is a gas oven you are using, you will need to preheat to level 5.
  3. While your oven is preheating, you can take the time to prepare the mixture for Scottish oatcakes.
  4. Mix oatmeal, bicarbonate of soda and salt in a large bowl.
  5. Slowly pour in the melted fat and stir the contents of the bowl simultaneously.
  6. Continue stirring until a thick paste is formed.
  7. Keep in mind that you will need to stir more vigorously as the mixture become thicker.
  8. Divide the mixture from the previous step into two balls of equal size.
  9. Sprinkle a board with oatmeal to prevent the mixture from sticking onto the work surface.
  10. Start kneading each of the oatmeal mixture balls until they start to slightly dry.
  11. You may have to sprinkle more oatmeal onto the work surface if required.
  12. Use a rolling pin to roll each mixture ball from the previous step into a ¼" thick disk.
  13. Once the mixture has been rolled, cut it into quarters of desired size.
  14. Place all the unbaked quarters on a greased baking sheet.
  15. You will need to bake the oatcakes for about 30 minutes in the preheated oven.
  16. Regularly check the oatcakes while baking as you do not want them to burn.
  17. An alternate method of cooking Scottish oatcakes is to cook them in a frying pan.
  18. You will need to cook the oatcakes for about 3 minutes on each side.
