How to Make Acorn Meal

Collect acorns to make the flour first. Acorn flour is the most popular item from which you can prepare several meals. Most people enjoy making soup, cereal, bread and pancakes from acorn flour. If you plan to collect acorns from an oak tree, make sure to check for damaged shells. Acorns with small scars and a dark hole should instantly give you an idea that the acorn is not good for making flour. A damaged shell usually means it has worms in it.

It is time to shell the acorns. Dry out the acorns until they open themselves. Grind them with the help of an electronic grinder or a food processor. Keep in mind that you will have to use plenty of water to rinse the acorns out as this is how you will get the flour.

Remove the tannins from the acorn flour. There is a lot of tannic acid in acorns and if you do not rinse it out of the flour, it may be hazardous (but nothing too serious) for your kidneys. Water can remove tannic acid quite easily. In order to make sure you have rinsed out the tannic acid, taste a little. If it tastes bitter, you can use more water to rinse the acid out.

Take the mush and leave it to dry out. Mush is not going to dry out itself if you are indoors. Leave it out in the open air for an hour or so. You should stir the mush with a spatula every now and then and when it starts to look like ground beef, you will know you are doing everything right.

Use acorn flour to bake simple bread or pancakes. For a pancake, take ½ acorn flour and mix it with any other flour, like wheat. Dry out the mixture and use a coffee grinder to get a more refined texture.
