Watermelon and Feta Salad Recipe

Ingredients:

– 6 cups cubed and seedless watermelon – chilled
– ½  cup extra virgin olive oil
– 2 limes – juiced
– 1 ½  tsp salt
– ¾  teaspoon black pepper
– 1 cup fresh chopped mint leaves
– 1 ½  cups crumbled feta cheese

    Take a fresh medium watermelon and gently cut the rind with a large sharp knife.

    Once you remove the skin, cut the watermelon’s fruit into about 1 inch slices each, equal to at least 6 cups. Place the watermelon slices in a fruit colander in order to drain the water released during cutting.

    Now, make the dressing for the salad. Take a small mixing bowl and pour ½ cup extra virgin olive oil into it. Squeeze in the juice of two fresh limes and top it with 1 ½ teaspoon of salt and ¾ teaspoon of black pepper. Whisk together the ingredients until the mix into one another and the salt dissolves completely. Set it aside for a few minutes.

    Meanwhile, take a large bowl and place the watermelon slices in it. Drizzle the olive oil dressing all over the slices and sprinkle 1 cup of freshly chopped mint leaves at the top. Now, toss smoothly to coat all the ingredients properly.

    Shift the mixture into a glass salad bowl and crumble 1 ½ cups of feta cheese over the top. Toss very gently to merge the feta into the salad.
