Coriander and Cabbage Slaw Recipe

Coriander and Cabbage Slaw recipe makes a deliciously low-fat salad which takes no time to prepare. In short, this dish is a unique explosion of zests and textures. You can make it with either green cabbage or the Savoy cabbage, depending on what is in season. Its colorful ingredients add to the overall look of your dining table.

Utensils needed: large mixing bowl, large serving bowl or plate, spoon, fork, whisk

Ingredients:

– 200g (about 7 oz) Savoy cabbage – finely shredded
– 100g (about 3 ½) carrots – peeled and cut into thin matchsticks
– 2 spring onions – finely shredded
– 2 tablespoons fresh orange juice
– 2 tablespoons low-fat yogurt – Greek yogurt is preferred
– 3 tablespoons low-fat mayonnaise
– 1 tablespoon finely chopped coriander or flat-leafed parsley
– 50g (2oz) dry roasted salted peanuts – roughly chopped

    Take a large mixing bowl and put together 200g of finely shredded, 100g of peeled and thinly sliced carrots, 2 finely shredded spring onions. Top the ingredients with 2 tablespoons of fresh orange juice, 2 tablespoons of low-fat yogurt and 3 tablespoons of low-fat mayonnaise. Sprinkle over 1 tablespoon of finely chopped coriander or flat-leafed parsley and mix the ingredients with a large spoon, fork or whisk.

    Season the mixture in a bowl with grounded black pepper and add a little salt in order to add taste to it.

    Transfer the mixture to a large salad plate or bowl and top it with the 50g of roughly chopped dry roasted salted peanuts.

    Scatter the remaining chopped coriander or parsley over the salad and serve immediately.

    Note: If you want to present the salad chilled, then simply place it in the refrigerator for a few minutes. However, don't chill the roasted, salted peanuts and chopped herbs. It is better to add them right before serving.
