Tomato Cucumber Salad with Mint Recipe

Ingredients:
– 1/3 cup red wine vinegar
– 1 tablespoon white sugar
– 1 teaspoon salt
– 2 large cucumbers, peeled, seeded, and cut into 1/2-inch slices
– 3 large tomatoes, seeded and chopped
– 2/3 cup chopped red onion
– 1/2 cup chopped fresh mint
– 2 tablespoons olive oil
– salt
– pepper to taste (freshly ground pepper tastes best and has a heavenly aroma)

Take out a large bowl. Add in the vinegar, sugar, and salt and mix thoroughly. Now add the cucumbers and mix them in as well. Leave it for marination for up to an hour. Do the rest of your work in this free period.

After an hour, add tomatoes, onion, mint, and olive oil to the marinated mixture. Toss well so that the flavors meld together well. The salad is ready. The colors are so vibrant that very few can resist tasting it so be prepared for a refill of the bowl.
