Easy Pasta Nioise Salad Recipe

Pasta Nioise Salad is nicely encumbered with colorful vegetables and well cooked chicken. It is also drizzled with the simple but delicious homemade dressing flavored with rosemary.

If you are interested in bringing variation to this simple salad, then simply replace chicken with the same quantity of tuna. This amazing dish can be dished up as a great dinner tonight or as a lunch tomorrow.

Ingredients:

– 1 pound pasta – penne, colored corkscrews or bows are preferred
– ¼ cup lemon juice
– ¼ cup extra virgin olive oil
– ¼ cup red onion – diced
– 1 garlic clove – properly minced
– ¼ teaspoon dried rosemary
– ½ pound green beans – halved lengthwise
– 1 ½ cups cooked or barbecued chicken – nicely diced
– 3 plum tomatoes – cut into sixths
– 2 hard-boiled eggs – cut into eighths
– ¼ cup flat-leaf parsley – finely chopped
– 1 Tablespoon capers – drained and rinsed
– Anchovy fillets and black olives, to taste
– Salt and pepper, to taste

Instructions

    Take a saucepan, pour in some cold water and add some salt into it. Now, stir until the salt dissolves and place the saucepan on the stove with medium range of heat. Wait until the salty water starts boiling and gently add in the pasta. Cook until lightly tender, stirring occasionally. Remove the saucepan from stove and drain the cooked pasta with great care, using sieve and wearing thick gloves to protect your hands. Rinse the warm pasta until cold running water for few seconds and drain them again and quiver the sieve in order to shake off excess water. Shift the cooked pasta into a large serving bowl and set aside to cool.

    Note: You can also cook the pasta by following the simple instructions given on the packet.

    In the meantime, mix the extra virgin olive oil, lemon juice, diced red onion, crushed garlic clove, and dried rosemary in a medium mixing bowl. Top with some salt and ground black pepper to add taste to it. Whisk again for few more seconds until it forms a thick and smooth dressing.

    Now, drizzle half of this dressing into the cooked pasta in the bowl and toss lightly to coat the pasta.

    It is the time to cook the green beans. Again, pour some eater into a medium sauce pan and bring it to boil over medium heat of stove. Add in the green beans and cook them until lightly tender. Now, drain the cooked beans with care and rinse them under cold water. Drain the beans again and shift them to the bowl containing the remaining dressing. Toss lightly in order to coat the beans.

    Note: If you do not have time to boil the green beans, then simply get advantage of the ready-to-use tin beans, which are easily available in the market.

    Add the coated beans to the pasta mixture in the large serving bowl and top with the cooked or barbecued diced chicken and tomatoes slices.

    Top with finely chopped flat-leaf parsley, drained and rinsed capers, Anchovy fillets and black olives to taste.

    Mix the ingredients very gently and arrange few hard-boiled egg slices on the top in order to give it more mouth-watering finishing touch.
