Hop Bill:

1.00 oz Centennial (10.0%AA Pellet) for 60 min.
0.50 oz Amarillo (8.5%AA Pellet) for 60 min.
0.50 oz Cascade (6.5%AA Plug) for 30 min.
0.50 oz East Kent Goldings (5.5%AA Plug) for 30 min.
0.50 oz Amarillo (8.5%AA Pellet) for 10 min.
0.50 oz Cascade (6.5%AA Plug) Dry Hopped in Secondary
0.50 oz East Kent Goldings (5.5%AA Plug) Dry Hopped in Secondary

Mash Schedule:

155F for 30 min.
150F for 30 min.
170F for 30 min. (sparging)

Started with 3 gallons of water at 175F to bring the mash up to 155F for about 30 minutes. Continuously added small amounts of 190F water to keep the mash at around 150F for 30 min. I sparged with another 1.5 gallons for about 30 mins.

This beer took 3rd place in the Topsfield Fair 2005 Homebrew Competition in the IPA category.

This full-bodied ale was intended as an American/English IPA hybrid. It has a nice lingering aftertaste, that is slightly earthy from the East Kent Goldings hops. The initial sip is sweet and full of hop flavor. The sweetness subsides with further tasting and is replaced by a warming hoppiness. The aroma is medium to mild, but the Cascade shows through more with age.
