No-Cook Healthy Salad Recipes for the Summer

One of the most unpleasant things in the summer are heating up a kitchen while cooking a meal. But being in the kitchen during the warm summer months doesn’t have to be miserable. Red Bell Pepper and Cherry Tomato Salad
Serves: 4-5 people
Ingredients:

-20 halved cherry tomatoes
-1/2 cup of red bell pepper strips
-1/2 cup of roasted red bell pepper strips
-4 table spoons of olive oil
-a pinch of safron
-a pinch of ground cumin
-1/3 teaspoon of white wine vinegar
-1/2 teaspoon basil

Preparation:
Combine all ingredients together. Season with black pepper and table salt for taste. You can make this about 2 hours ahead of time. Toss occassionally for taste and freshness.

Layed Iceberg Lettuce Salad
Serves: 8 people
Ingredients:
-1/2 large head iceburg lettuce
-1 (8-ounce) can of water chestnuts, drained and chopped finely
-1 cup celery.
-1 cup green pepper
-1 (17-ounce) can Lesueur petit peas
-1 1/2 cups mayonnaise
-1 1/2 teaspoons granulated sugar
-1 (3-ounce) jar of bacon bits
-1 cup shredded cheddar cheese
-1/4 cup of shreeded american cheese

Preparation:
Shread head of lettuce, celery, and green pepper. Layer in serving bowl as follows: lettuce, water chestnuts, celery, green peppers, and peas. Spread mayonnaise evenly over top. Sprinkle with sugar, then cheeses and finally bacon bits. Cover tightly in container and chill for 6 hours.

Summer Cucumber Salad
Serves: 8 people
Ingredients:
-1 thinly sliced cucumber
-1 thinly sliced white onion
-1/2 cup of white wine vinegar
-1/2 cup of white sugar
-pinch of parsley
-1 head of shredded lettuce

Preparation:
Combine all ingredients together. Let salad sit for 1-2 hours and toss occassionally. Keeps well in tightly sealed container in fridge.
