Cooking with Oat Flour Recipes

Cooking with oat flour is a tasty alternative to cooking with wheat or refined flour. Plus, the nutritional value is greater. How does one cook with oat flour?

First of all, you can save some money by making your own oat flour. Instead of buying it prepackaged and exorbitantly overpriced, spend a few minutes in your kitchen. Making your own flour is easier than you may think. It makes cooking with oat flour much more fun, also.

Oat Flour Recipe:
1) Simply take some whole oats (rolled or quick variety) and put them into a blender or food processor. A coffee bean grinder works remarkably well, also.
2) Grind until a floury consistency is reached.
3) That is all there is to making your own oat flour.
4) Store in airtight container such as a jar.
5) Label the jar with the grinding date.

Here are some recipe suggestions for cooking with oat flour:

1) As a meat coating:
a. Place oat flour and some spices in a pie pan. Mix together.
b. Beat some milk and egg together in another pie pan.
c. Dip chicken or meat in egg mixture.
d. Then, dip meat into oat flour.
e. Cover thoroughly.
f. Place onto lightly greased baking sheet.
g. Cook in 350 oven until meat is done.

Or, try this class-tested oat flour recipe that is popular with my students. It is a great way to introduce cooking with oat flour:

No Fry Fried Chicken (serves 4)
4 whole chicken breasts, no skin, no bone
�½ cup yogurt, plain
1 t mustard
�½ cup oats, rolled or quick
�½ cup oat flour
�½ t teach parsley, thyme, basil

�§ Prepare baking sheet by lightly spritzing with oil or nonstick spray.
�§ Soak chicken in ice water.
�§ Remove and pat dry with paper towel.
�§ In small bowl, mix yogurt and mustard together.
�§ Pour yogurt mixture into pie pan (or flat pan.)
�§ In separate flat pan, combine oats, flour, and spices together.
�§ Dip chicken breasts into yogurt mixture. Coat thoroughly.
�§ Then, dip chicken breasts into oat mixture.
�§ Coat thoroughly.
�§ Place chicken onto prepared baking sheet.
�§ Bake in 400-degree oven for approximately 30 minutes.

2) In baked products:
Oat flour can be added to a variety of recipes calling for refined or wheat flour. It adds an extra nutty taste and is nutrient-rich. Oat flour can be used as a substitute for other flours. Or, I like to decrease the amount of refined or wheat flour by half and replace it with oat flour. Many times, the recipe’s liquid amount must be adjusted.

Here’s an easy recipe to enjoy cooking with oat flour in baked foods:

Oat Shortbread (makes 24 servings)

2 cups whole oats, rolled or quick variety
1-3/4 cups oat flour
1/3 cup brown sugar
1/3 cup apple juice, frozen concentrate
�¼ cup butter, margarine, or your choice of
1 T vanilla

Ã?§ Lightly oil and prepare a 9″x13″ baking pan.
�§ Mix all ingredients together.
�§ Stir thoroughly.
�§ Spread mixture into prepared baking pan.
�§ Press down mixture.
�§ Bake in 325 oven for about 10 minutes.

�§ Careful when removing from pan after cooking.
�§ This mixture has a tendency to be very crumbly.
�§ It will turn into granola quite easily!
