The key to these time and money saving recipes is to cook the chicken for each meal all at once. You have a few choices when cooking your chicken. You can bake, grill, or boil it. Whichever way you would like to cook your chicken is fine. Make sure you could 5 pounds of boneless chicken for these time saving recipes because each one calls for a pound of diced chicken.

The key is to pre dice and separate 1 pound of chicken into 5 Ziploc bags. Then when you need to cook in a hurry, your chicken is ready for you! You don’t even need to thaw it out for these recipes.

Chicken Divan

3 cups diced chicken meat
1 cup sour cram
1 cup mayonnaise
1 can cream of chicken soup
1 cup shredded cheddar cheese
1 10 ounce package broccoli florets
2 sleeves of crushed Ritz type crackers

Combine all of the ingredients except for the crushed crackers. Spread the mixture into a grease casserole dish. Top evenly with the crushed Ritz crackers. Bake for 45 minutes at 350 degrees to until hot and bubbly. You can serve this with rice or noodles and some French bread for a well rounded meal. This one pot chicken recipe should fee between 4 – 6 very hungry people.

Chicken Chili

Chicken chilli is one of the easiest time saving recipes I know. The night before you go to bed soak you beans in a bowl of water. They will be ready for you to add to your chicken chili in the morning.

1 pound diced chicken
1 package of dried beans (soaked)
2 14 ounce cans diced tomatoes
1 package of mild chili seasoning
2 cans of low sodium, chicken broth

Drain the pre soaked beans. Combine all ingredients in a slow cooker. Set the crackpot on low. Let it cook until supper time. Now that is easy! Add more water or chicken broth if it gets too thick.

If you forget to soak you beans follow the quick soak method on the packaged directions or substitute canned beans.

Chicken Pot Pie

3 Cups chicken
1 10 ounce package of mixed vegetables
1 cup whole milk
1 can low sodium chicken broth
3 tablespoons flour
3-tablespoon butter
Salt and Pepper
Canned biscuits or home made biscuit dough

Melt your butter in a large pot. Wisk In the flour. Cook this stirring constantly or about 5 minutes. Pour in the milk and chicken broth. Wisk together until smooth and bubbling. Reduce hear to low. Add chicken and vegetables. Carefully pour into a grease casserole dish. Top with biscuit dough. Bake for 45 minutes at 350 degrees or until the biscuits are done.

Chicken and Wild Rice Casserole

1 pound diced chicken
2 cans low sodium chicken broth
2 boxes of long grain and wild rice (packets of ready rice are fine)
1 onion diced
1 green pepper diced
4 Tablespoons butter
4 tablespoons flour

Cook the rice according to the package directions. Melt the butter in a large saucepot. Wisk the flour. Cook stirring constantly for 5 minutes. Pour in both can of chicken broth. Wisk and stir until thick and bubbly. Pour in the onion, green peppers, rice, and chicken. Pour this entire chicken recipe carefully into a greased casserole dish. Bake at 350 degrees for 45 minutes until hot and bubbly. Serve with a salad and some fresh bread and you have a meal perfect for family or guests.

BBQ Chicken Calzones

3 cups diced chicken
2 cups BBQ sauce
�½ red onion sliced thinly
2 cups mozzarella cheese
4 Pizza Dough Balls (2 canned or 2 frozen dough balls)

Mix your chicken, BBQ sauce, and onions together in a bowl. Separate your pizza dough each into 2 pieces, making four calzones. Roll the dough out and fill with the chicken mixture. Top with desired amount of cheese. Pull dough over the top of the ingredients and seal shut with a fork. Bake until golden brown and the dough is done. Cook at the temperature on the package of pizza dough.
