Soup is one of the most useful dishes for those who care about their diet and health. Soup helps improve digestion and give a feeling of satiety. Nowadays, people have come to understand the importance of seafood in our diet. Various studies and researches have proved that the best sources of healthy fats, vitamins and minerals cab actually be found in a variety of seafood.
Ingredients
- Chicken stock – 6 cups
- Raw shrimp – 12
- Lemongrass – 1 stalk
- Kaffir lime leaves – 2
- Garlic – 4 cloves
- Galangal – 1 teaspoon
- Red chillies – 1
- Tomato – 1
- Coconut milk – ½ can
- Fish sauce – 2 tablespoons
- Soy sauce – 1 tablespoon
- Lime juice – 1
- Sugar – 1 teaspoon
- Fresh coriander – ¼ cup
Instructions
- Take a large soup pot, and add lemongrass and lime leaves in it, and place it over medium heat until the mixture comes to a boil.
- Reduce the heat, and add garlic, galangal/ginger, chilli and mushrooms in the soup pot.
- Cook for about 2 to 3 minutes or at least until the mushrooms are tender.
- Add shrimp and tomato in the pot, and boil it over medium heat for about 3 to 4 minutes or until the shrimp turns into pink.
- Reduce the heat to medium-low, and add coconut milk, fish sauce, lime juice, soy sauce and sugar.
- Whisk them together gently until all the ingredients are properly mixed.
- Taste the soup to determine the spice and salt, and add more chilli or fish sauce according to your taste.
- After making sure that the taste is perfect, based on your liking, pour the soup in a bowl, and sprinkle fresh coriander powder over it.
