Preparing a good and tasty soup at home is not an easy task but with a little help from internet, you can make amazing Chicken and Dumplings Soup. All you need is some cooking skills and all the ingredients and you are ready to go.
Ingredients
- Soup -
- Cooking oil - 2 to 3 tablespoons
- Onion, diced - 1 large
- Carrots, diced - 2
- Stalk celery, diced - ½
- Meat from 1 chicken, cooked and shredded
- Chicken broth - 4 to 6 cups
- Fresh cut green beans - 1 cup
- Pearl barley - 1 cup
- Celery salt - 1 teaspoon
- Fresh chopped parsley - 1 tablespoon
- Bay leaves - 2
- Salt and pepper
- Dumplings -
- Milk - 1 cup
- Butter - ½ cup
- Salt - ½ teaspoon
- Nutmeg - ½ teaspoon
- Cupall-purpose flour - 1
- Eggs - 3
Instructions
- If you have a Dutch oven that will make things easier but you can also use a5- to 6-quart heavy pot with a tight-fitting lid in order to make this soup. Take a small amount of cooking oil and sweat the onions, carrots and thyme. Cover them and up and cook on low temperature and in the meantime, do not forget to stir occasionally until the onions are soft. It can take up to five minutes of your time.
- Add ¼ cup flour and cook and stir it for like 30 seconds. After that take broth and boil it up and do not forget to stir in constantly on order to make your soup tastier. Add some salt and pepper to it and stir it some more. Take the small pieces of chicken and nestle them in pit. Reduce heat to medium low and cover the pot and let it cook. Keep on the stirring process from time to time. Let it cook for 20 to 25 minutes.
- In the meantime, you can make dumplings and save some time. Take a medium size bowl and add the remaining ¾ cup of flour. Also add dill, baking powder and ½ teaspoon salt in that bowl. Now use a fork to gradually stir in ½ cup milk to form a moist and soft batter. Be careful not to make it too thick and it should be just a little thicker than pancake batter. However, if it gets too thick, add additional 2 tablespoons milk and wait for it to prepare.
- Put peas into a pot and stir it. Drop the batter in simmering liquid in 10 heaping tablespoonfuls. You will notice that dumplings will swell as they cook. Cover it up and simmer until dumplings are firm and chicken is tender. It wait take around 20 minutes. Sit back and enjoy your Chicken and Dumplings Soup.
