How To Make Spicy Green Tomato Relish

Spicy green tomato relish is a perfect blend of tomatoes, bell peppers, onions and spices. It is very delicious, juicy and nutritious. It can be kept in jars for a long time. Furthermore, you can also present it as a gift to someone who is a lover of food.

Utensils: Canning lids, Canning jars (clean and sterilized), Blender, Oven mitt, Stock pot, Knife, Cutting board, Large stock pot, Canning tongs, Gauze or spice bag (optional)

Ingredients:
Green tomatoes: 24 large
Onions: 12 large
Green bell peppers, halved and seeded: 3
Celery seed: 3 tablespoons
Red bell peppers, halved and seeded: 3
White sugar: 5 cups
Mustard seed: 3 tablespoons
Salt: 1 tablespoon
Cider vinegar: 2 cups

    Take a grinder and put tomatoes, green bell peppers, onions and red bell peppers into it. Now, grind all of them well. You may have to grind them in batches if you are making the relish for big serving.

    Place a colander with cheesecloth in a large bowl or in sink and put the grinded tomato mixture on it. Let the mixture drain for around one hour.

    Then, take a stockpot (non-aluminium) and put the tomato mixture in it. After that, add mustard seed, salt, vinegar, sugar and celery seed in the mixture. Keep it on a low heat stove and stir frequently.

    You have to sterilise jars and lids in which you will keep the tomato relish (6 one-quart or 12 one-pint jars will be reasonable). Now, pack the tomato relish into the sterilised jars and fill them all the way to the top. You must cover the jars with the lids properly.

    Now, place a rack in the bottom of the stockpot and fill it halfway with boiling water. Use a holder to lower the jars into the pot. Add more water if needed and boil it well. After boiling, cover them for 30 minutes.

    Place the jars on a wood or cloth-covered surface and let them cool down. Then, press the top of each lid with the help of your finger.
