Fruit pizza is generally served as a light and refreshing dessert after lunch or dinner, but can also make a great breakfast or brunch dish. A base made of cookie dough is layered with a creamy, cheesy frosting, and then topped with fresh fruit to make a refreshingly sweet “pizza”.

Utensils: Large bowl, baking dish, mixing bowl, measuring cup, spoon and servings plates.
Ingredients:
Butter, softened: 1/2 cup
White sugar: 3/4 cup
Egg: 1
All-purpose flour: 1 1/4 cups
Cream of tartar: 1 teaspoon
Baking soda: 1/2 teaspoon
Salt: 1/4 teaspoon
Package cream cheese: 1 (8 ounce)
White sugar: 1/2 cup
Vanilla extract: 2 teaspoons
Assorted fruits of your choice

The first step to making a fruit pizza is to prepare the crust. Start by preheating your oven to 350 degrees F (175 degrees C). Then, in a large bowl, begin assembling the dough for the crust.

First, cream the 3/4 cup sugar and butter together in the bowl, using an electric mixer or a hand-held whisk. Then, beat in the egg. Set this aside, and in another bowl, combine the flour, cream of tartar, baking soda and salt. Pour this into the creamed mixture, and blend it all together until it forms a dough.

Press this fruit pizza dough into an ungreased pizza pan, and bake it in the preheated oven until it develops a light brown colour – this should take around 8 to 10 minutes. Once it is done, slide it out, and leave it on a wire rack to cool.

While the crust is cooling, you can begin working on the frosting for the fruit pizza. In a medium-sized bowl, combine the cream cheese with 1/2 cup sugar and the vanilla extract. Use an electric mixer to beat these ingredients together gently, until they form a light, creamy, and fluffy frosting.

Spread the frosting onto your cooled crust, and spread on fruits of your choice. These can include pitted cherries, blueberries, raspberries, and a variety of sliced fruits such as mangoes, kiwis, peaches, and pineapples. A sprinkling of pomegranate seeds can be used as a final garnish. Chill, and then cut into slices and serve.
