How to Cook Tender Calf Liver
Beef, pork and chicken livers are rich in protein, iron, and other nutrients which are excellent for your health. You can cook a tasty tender calf liver by smothering it in onions. Just follow some basic steps and you can enjoy a delicious meal.
Prep Time: 40 – 50 min
Yield: 4 persons
Utensils: Glasses, plates, spoons, forks, knives, frying pan, slotted spatula, bowl.
Ingredients:
Yellow cooking onion, peeled and thinly sliced: 4 cups
Butter or margarine: 4 tbsp
Flour: 3 tbsp
Seasoned salt: 1 tbsp
Black pepper: 1/8 tbsp
Thinly sliced beef or pork liver, whole chicken livers: 1 lb
Beef stock or broth (for beef liver) or chicken broth (for pork or chicken liver): 3/4 cup

Before beginning wash all the utensils and the liver with clean water. Don't forget to wash your hands as well.

Now take two tablespoons of butter and spoon it in a frying pan.

Add onions in the pan.

You need to cook the onions for about five minutes on medium heat until they are golden.

Now take the pan off the heat and transfer the onions into a bowl.

Turn off the heat under the pan and set the onions aside.

Now take a shallow pan to mix the flour, pepper and salt.

Cut your liver into thin slices and lay each slice in the flour mixture coating it properly with the mixture.

Now place the liver slices (flour coated) on a plate or a dish.

Go back to the butter and spoon it in the pan and turn on the heat set on medium. This is done to effectively melt the butter.

Now with the butter melted and the pan warm, you need to carefully add the liver slices and fry them until they become golden brown.

Keep turning them over so that they are golden on both sides.

Do not overcrowd the pan with too many pieces as it is suggested that you place two pieces at a time.

Now with the slices still cooking in the pan, add the broth and cooked onions on the liver slices.

Cover the pan and turn the heat down to low and let it cook for about 30 minutes.

Once the liver is no longer pink or red you will know that it has been properly cooked.
