Church window cookies are usually made as part of Christmas festivities. This may be because they are so colourful and funky. However, you do not have to wait for Christmas to taste these awesome cookies. They can be made at any time of the year and day. These cookies are rich in chocolate, marshmallows and other yummy ingredients.
Ingredients
- Margarine: ½ cup
- Chocolate chips: 12 ounces
- Colored miniature marshmallows: 10½ ounces
- Nuts, chopped: ½ cup
- Coconut: ½ cup
Instructions
- Take a small saucepan. Add to it the butter and chocolate chips and melt them slowly over low heat. Stir constantly so that there is a division of heat and the mixture does not stick to the pan surface.
- Remove the saucepan from the heat and let it cool so that the marshmallows do not melt when you add them. Stir in the vanilla. Now add in the marshmallows and the walnuts.
- Take a large baking sheet. Sprinkle half of the coconut over the baking sheet so that the bottom of the cookies can be covered with it. Use a spoon to lay the chocolate mixture on the baking sheet in a log or roll form. Sprinkle the rest half of the coconut over the roll. Now wrap the roll firmly in the baking sheet and refrigerate for a couple of hours. Chilling will help set it in shape and make it firm. It will take up to an hour.
- After the roll has set in shape, cut it in cookie slices. You can serve right away or store the cookies in air-tight jars to use later.
