This is a popular Russian recipe. It is called Syrniki in Russian. Farmer’s cheese is used to make these pancakes and it is available with the other cheese varieties in the super market. The recipe is perfect for breakfast and is different from the usual things eaten in the morning. If you like to try new food then you should really make this for breakfast tomorrow.
Ingredients
  • Farmer’s Cheese – 1 lb
  • Sugar – 2 tbsp
  • Salt – ⅛ tbsp
  • Vanilla – 1 tsp
  • Eggs – 2
  • Raisins (optional) – ½ cup
  • Flour – 2 tbsp
  • Oil – 1 tbsp
Instructions
  1. Take a large plate and sift 1 cup floor in it. In a separate mixing bowl, add sugar, salt, cheese, eggs, vanilla, raisins and 2 tablespoons of flour.
  2. Mix them together to form rough dough.
  3. Divide the mixture into 10 equal parts and make a small ball of each one.
  4. Roll them into a ball with your hand.
  5. Roll each of the balls into the flour so that they are completely coated.
  6. Take a non stick pan and put it on medium high heat.
  7. Heat the oil in it.
  8. By placing each ball between your palms, flatten them a little and put them in the frying pan.
  9. It will be a patty shape.
  10. Cook each pancake one by one.
  11. Cook it on four minutes on one side and it will be a golden brown colour.
  12. Change sides after four minutes and cook till the other side is golden.
  13. Remove them from heat once they are done.
  14. Serve them hot.
  15. They go really well with sour cream, honey or jam.
  16. They can also be eaten cold; they will taste just as good.
