How to Make Cottage Cheese Sticks

If you are planning to organise a barbecue party and suddenly found out that some of the guests are vegetarian, you will be forced to consider making something that complements with the occasion, while conforming to vegetarian needs. For that purpose, you can opt for making Cottage Cheese Sticks, which appear almost same as barbecue items and taste delicious as well. The recipe uses paneer (cheese) instead of chicken or mutton in the sticks.

Yield: 9 medium sized sticks
Utensils: Large bowl, measuring cups, spoon, grill, mixing bowl

Ingredients:
Paneer / cottage cheese (dice to 1 inch cubes): 400 grams
Red bell pepper (diced to 1 inch cubes): 1
Green bell pepper (diced to 1 inch cubes): 1
Yellow bell pepper (diced to 1 inch cubes): 1
Medium sized onion (diced and layers separated): 2
Bamboo skewers  (soaked in water for 2 hours): 10

Marinade for Paneer / cottage cheese:
Amchoor powder: 2 tsp
Garam masala: 1 tsp
Ginger garlic paste: 2 tbsp
Chilli powder: 2 tsp
Turmeric powder: 1 tsp
Cumin powder: 2 tsp
Coriander powder: 2 tsp
Yogurt (curds)/300ml: 1 cup
Oil: 1 tsp
Lemon juice: 1 tsp
Salt: To taste

Marinade for vegetables:
Olive oil: 1 tbsp
Lemon juice: 1 tbsp
Pepper: 1 tsp
Salt: To taste

Instructions

    Take a bowl and put yogurt and ginger garlic paste in it. Now add amchoor powder and garam masala and mix them well. Add in chilli powder, cumin powder, coriander powder, oil, lemon juice, salt and turmeric and blend them well together to form a paste. You will use this paste to marinate cottage cheese.

    Now take cottage cheese pieces and put them in the bowl which contains the paste you just created. Marinate them well and place the bowl in the refrigerator for around 2 hours. Take vegetables and marinate them in pepper, olive oil, lemon juice and salt.

    You will now need to thread the vegetables and the cottage cheese into the skewers. You can thread the alternatively, or as per your requirements. Repeat the process for each skewer you have.

    Place the skewers over the grill and fry them from all the sides. You can also fry them on a pan using a small amount of oil.
