Spicy Prawn Cocktail Recipe
Prawn cocktails have been around for a good 30 years now, and are likely to never go out of fashion, given the fact that they are thoroughly delicious. Most people love nothing better than a spicy prawn cocktail – it is fun, retro, and serves as the perfect start to any get-together. This attractive seafood dish, which uses juicy prawns as the starring ingredient, is perfect for pretty much every season and occasion.
Unique and irresistible in taste, the spicy prawn cocktail contains shelled prawns, doused in a dressing made of fresh tomato ketchup and creamy mayonnaise – it is a good idea if you select large prawns, as they are more substantial, richer in taste, and appropriate for dishes that are characterized by strong, spicy flavours. The most popular method for serving a spicy prawn cocktail is to serve individual portions in long, fluted varieties of bar glasses (such as a martini glass), as this gives it added visual appeal.

Ingredients:
– 32 large cooked and peeled prawns
– 300g/1 cup top-quality mayonnaise
– 2 tablespoons sweet chilli sauce
– 1 tablespoon tomato sauce/ketchup
– 2 large, finely shredded kaffir lime leaves
– 1/2 a head of iceberg lettuce, shredded
– 3 avocados, peeled, pitted, and diced
– Juice of one lime
– Lime wedges for garnish

First, you have to start by making the sauce, which is one of the main ingredients in a spicy prawn cocktail. Take a medium bowl and combine the mayonnaise and sweet chilli sauce in this. Then, add the tomato sauce/ketchup, lime juice, and half the lime leaves to it, and mix them in properly. Now, set this aside.

Next, divide the shredded iceberg lettuce evenly between the eight large bar glasses – this will serve as the bottom layer in the prawn cocktail.

Then, scatter the diced avocados over the lettuce bed, and follow it up by evenly distributing the prawns between all eight glasses. Make sure the prawns you use have been peeled, deveined, and cooked properly – overcooking will make them tough and rubbery, while undercooking them will lead to an unpleasant, slimy texture.

For the finishing touch, use a spoon to add a large dollop of the sauce to each serving, and then top the glasses with the remaining shredded lime leaves. Finally, fix a lime wedge onto the rim of each glass, as a fresh garnish.
