How to Cook Bitter Melon Dish

Bitter melon or bitter gourd is a healthy vegetable which is native to Asia, Africa and the Caribbean. This vegetable is rich in vitamins and has been used by people since ancient times to treat different health conditions like stomach upsets, cold and flu etc. When eaten raw, as the name suggests, it tastes a bit bitter; however, cooking subdues its bitterness to some extent. One of the easiest ways to make a dish is to cook it with eggs. Thinly sliced bitter gourd is stir fried with fermented black beans and chopped garlic. No onions or tomatoes are needed to make this recipe.

Utensils: Cutting board, sharp knife, sauce pan, stirring spoon, measuring spoons, serving plate.

Ingredients:
Bitter melon (bitter gourd): 150-200 grams
Eggs, beaten: 2
Fermented black beans: 1 tsp
Cooking oil: 1 tbsp
Cloves garlic, minced: 3
A small pinch of salt or to taste

Instructions

    Thoroughly wash bitter melon and cut it to half, lengthwise, using a sharp knife.

    Scoop out the seeds from both the halves using a spoon and slice them thinly.

    Heat one tablespoon of cooking oil in a saucepan to stir fry chopped garlic and one teaspoon of black beans for half a minute, or until fragrant.

    Add thinly sliced bitter melon into the saucepan and stir fry it over high heat for a couple of minutes or until almost cooked. At this stage the bitter melon slices will be slightly translucent.

    In a small bowl break two eggs and beat them lightly with a hand whisk.

    Pour the beaten eggs slowly over the stir fried bitter melon slices, and cook for another one or two minutes, stirring continuously, until the eggs are completely cooked and dry.
