How to Make Vegetarian Baked Beans from Scratch

Baked beans make the perfect addition to your menu for a picnic party or a potluck, especially during winters. They are not only easy to make but are generally liked. You can also eat the leftovers for breakfast with some boiled eggs and toast.

Yield: 5 to 6 servings
Utensils: Oven, cooking pot, sauce pan, casserole or baking dish, measuring cups, measuring spoons, strainer set on bowl.

Ingredients:
Beans (white, pink or a mixture of the two): 2 pounds
Onion, chopped: 1/2
Cloves of garlic, chopped: 2
Maple syrup: 1/2 cup
Tomato sauce or about 1 cup of ketchup: 1 can
Yellow mustard: 1 tablespoon
Worcestershire sauce: 2 tablespoons
Fake bacon: 1/2 pound
Red wine vinegar: 1 tablespoon
Salt and pepper
Vegetable broth: 3-4 cups
Water: 3-4 cups
Brown sugar (optional)

Instructions

    Check your beans for any discoloured or wrinkled beans as well as empty shells and debris before rinsing them thoroughly.

    Soak the beans in cold water for 8 to 12 hours. This will not only reduce the cooking time of your beans but will also increase their size.

    Transfer the soaked beans to a large cooking pot and allow them to simmer on low heat for a couple of hours or until al dente.

    Run the cooked beans through a strainer set on a bowl, before removing the beans and saving the liquid.

    Mix Worcestershire sauce, ketchup, molasses and seasonings in a sauce pan and bring to mixture to boil on medium high heat, stirring occasionally.

    Meanwhile, preheat the oven to 325 degrees Fahrenheit.

    Take a casserole dish and cover its bottom with half of the cooked beans.

    Top the beans with finely chopped onion and bacon.

    Pour the cooked sauce over the beans, and apply another layer of beans, onions and bacon.

    Pour the remaining sauce on the top and cover the dish with aluminium foil and bake for about two hours or until tender in an oven preheated at 325 degrees Fahrenheit. If your beans are too saucy, bake them uncovered for another 15 to 20 minutes and serve warm.
