How to Make Baked Three Bean Stew

Solid ingredients, including veggies, meats and legumes can be cooked in a liquid to create what is called a stew. Try making this fibre-rich three-bean stew which is an extremely delicious version of baked beans.

Yield: 12 to 14 servings
Utensils: Oven, sauce pan, casserole or bean pot, mixing bowl, measuring cups, measuring spoons.

Ingredients:
Ground beef: 3 pounds
Onion, chopped: 1
Chopped sweet red pepper: 1/2 cup
Veggie beans, drained: 1 can (16 ounces)
Chili beans, undrained: 1 can (16 ounces)
Pinto beans, rinsed and drained: 1 can (15 ounces)
Turkey, drained: 1 can (16 ounces)
Ketchup: 1 cup
Packed brown sugar: 1/2 cup
Chili powder: 3 to 4 tablespoons
White vinegar: 1 tablespoon
Salt: 1 teaspoon
Ground cumin: 1 teaspoon
Cayenne pepper: 1 teaspoon
Hot pepper sauce: 1/2 teaspoon
Garlic powder: 1/8 teaspoon
Pepper: 1/8 teaspoon

Instructions

    Carefully open the cans of beans and turkey, drain them and set aside.

    Take a large sauce pan and heat oil in it on medium high heat.

    Add onions to the sauce pan and sauté them until transparent.

    Stir in the beef and red peppers and cook over medium high heat, stirring occasionally until the peppers are crisp, tender and meat is no longer pink. It will take around 3 to 5 minutes.

    Once the peppers and beef are done, drain them and transfer to a medium sized mixing bowl.

    Stir in all three beans and turkey strips.

    Add one cup of ketchup and 1 tablespoon of white vinegar into the mixture and toss to combine.

    Season your dish with three to four tablespoons of chilli powder and a teaspoon of salt.

    Also add one teaspoon of ground cumin, one teaspoon of cayenne pepper, ½ teaspoon of hot pepper sauce, 1/8 teaspoon of garlic powder and 1/8 teaspoon of black pepper and mix well to combine.

    To add sweetness to your baked beans, stir in half cup of brown sugar.

    Transfer the ingredients to a bean pot and cover and bake for 1 ½ to 2 hours in the oven, preheated at 350 degrees Fahrenheit.

    Remove from the oven, allow to set for 5 minutes and serve warm.
