How to Make Baked Caramel Corn

Caramel corn is addictive. It is one of the lightest treat you will ever eat and the best part is that it is supremely easy to make. This delight can also be consumed during Halloween and can be divided into different gift bags.

Cook time: 20 min
Bake time: 01 hour
Total time: 01 hour and 30 to 35 min
Utensils: Popcorn popper, large roasting pan, a couple wooden spoons, 2 qt sauce pan and waxed paper

Ingredients:
Unpopped popcorn (makes about 5 quarts popped): 1 Cup
Brown sugar: 2 Cup
Butter: 1 Cup
Corn syrup (we used ‘light’ the original recipe calls for ‘dark’): 1/2 Cup
Salt: 1 tsp
Baking sode: 1/2 tsp
Handful of peanuts (optional).

    Pop the corn

    The first step in the preparation of caramel corn is to pop the corn. You can use a specially designed popper or an air popper depending on the availability. Whatever the case is, make sure that you remove the flop corn from the mix. Also set the oven to preheat at 250 degree centigrade.

    Prepare Caramel

    Take the sauce pan and add the mentioned quantities of brown sugar, butter, corn syrup and salt. Heat till the butter is melted. Once melted, let the mixture boil for 5 minutes.

    Add baking soda

    Remove the pan from the heat and add baking soda to it. The soda will give the mixture a foamy texture upon stirring.

    Add caramel to corn

    After the mixture has achieved a good consistency, add caramel to the corn and fold together, ensuring a nice mix.

    Bake

    Now add the mixture of pop corn and caramel into the oven which is already at 250 degree centigrade. Take out the mixture after 15 minutes and stir it.

    Now put it back into the oven and bake it for another 15 minutes, followed by stirring. This process has to be repeated two more times, meaning that there will be a total of 4 cycles.

    Add the peanuts after the third cycle.

    Cool

    Immediately remove the caramel corn from the oven and allow it to cool on a wax paper.
