How to Make Cake Batter Cookies

Novices often encounter little success when baking cookies from scratch. For instance, if the quality of baking soda is not perfect, the cookies do not rise properly. If you have also tried your hand at baking homemade cookies and have faced the same issue, try this shortcut.

Simply use over the counter cake mix in your recipe and make delicious and moist cake batter cookies. Since cake mix is formulated to rise a bit while baking, cookies made from this mix will never turn out flat.

Preparation Time: 5 to 7 minutes
Baking Time: 10 to 12 minutes
Baking Time: 15 to 20 minutes
Yield: Two dozen cookies
Utensils: Measuring cups, Spatula, Tablespoon, Hand mixer, Bread dough beaters, Medium size mixing bowl, Baking sheet, Wax paper.

Ingredients:
– Cake mix (any flavor): 1 box
– Eggs: 2 large
– Oil: 1/2 cup
– Chocolate Chips: 12 oz (optional)
– Nuts: ¾ cup (optional)

    Before you start the recipe gather all the ingredients and make sure the equipment (dough beaters, hand mixer etc.) is in working condition.

    Preheat the oven to 350 degrees Fahrenheit.

    Also prepare your baking sheet by lining it with wax paper. If you do not have wax paper, apply a small amount of melted butter or vegetable shortening to the cookie tray and dust it lightly with all-purpose flour, shaking off the excess. Set the baking tray aside and prepare the batter for cookies.

    Sift the cake mix and put it in a medium sized mixing bowl.

    Break two large eggs in the bowl containing cake mix and also add half cup of oil to it.

    Mix the ingredients well with your hand mixer set on medium speed for 2 to 3 minutes, while scraping the sides of the bowl with a plastic spatula to ensure an even consistency.

    Stop the mixer once your cookie batter gets the shape of a smooth paste. If you are using chocolate chips and nuts, add them to the batter and mix with a spoon or spatula.

    Now scoop small portions of the cake mix batter and spoon them onto prepared cookie sheet, at least two inches apart, since the cookies will spread a bit as they bake.

    Place the cookie sheet in the oven preheated at 350 degrees Fahrenheit and bake for 10 to 12 minutes or until the cookies are golden brown.

    Remove the cookies from the oven and allow them to cool on the sheet for a couple of minutes before moving them to a wire rack.
