Ingredients:

– 2 tomatoes, chopped
– 1 large red pepper, chopped
– 2 green chilies, minced
– 170ml (6 fl oz) lemon juice
– 1 tablespoon chopped fresh coriander
– 1 tablespoon chopped fresh basil
– pinch cayenne pepper
– 1 (340g) tin sweet corn
– 1 (400g) tin black beans
– 1 tablespoon olive oil
– 1 medium onion, chopped
– 1/2 teaspoon minced garlic
– 145g (5 oz) easy cook brown rice
– salt and freshly ground black pepper to taste

    Take a large bowl to combine red pepper, tomatoes, chillies, coriander, lemon juice, basil, beans, cayenne pepper and sweet corn. Stir these vegetables in order to combine them and then set aside.

    Get a medium sized saucepan and set it at medium low heat to heat the olive oil. Add onions and cook until they become translucent. Then, add garlic to it and cook for one more minute. Subsequent to this, transfer the rice to this saucepan and toss until it gets coated.

    Sauté the rice as per the specifications mentioned on its packaging. When the rice are cooked allow them to cool down slightly.
