Christmas Salad Recipe

Ingredients:

– 90g slivered almonds
– 1/2 red onion, thinly sliced
– 125 crumbled blue cheese, such as Gorgonzola
– 500g mixed salad greens

For the Cranberry Dressing:

– 3 tablespoons (60ml) red wine vinegar
– 5 tablespoons (100ml) extra virgin olive oil
– 30g fresh (or thawed frozen) cranberries
– 1 tablespoon Dijon mustard
– 1 small clove garlic, minced
– 1/2 teaspoon salt
– 1/2 teaspoon freshly ground black pepper
– 2 tablespoons water

    Roast the almonds

    Set the oven to 190 degrees C in order to preheat it. Then, take slivered almonds and place them in a baking tray in single layer. Put this baking tray along with the almonds in the oven and toast them for about 5 minutes or until they start turning brown.

    Prepare the dressing

    Take a food processor or blender and blend oil, vinegar, mustard, garlic, cranberries, water, salt and pepper. Blend all these ingredients until they become smooth.

    Mix them all

    Get a large bowl, place onions, blue cheese, salad greens and the almonds along with the dressing and toss them together until they are evenly coated.
