Autumn Apple Recipes

One of my favorite things about autumn, aside from the cooler weather and changing leaves, would have to be the smells that radiate from my kitchen. Apples are a big staple of autumn since they are ripe for the picking during this wonderful season. So after a family trip to your local apple orchard to pick some of these delicious little treats, why not try your hand at making some of these tastey Autumn Apple Recipes?

My favorite apple recipe would have to be Apple Bread. It makes a wonderful snack as well as a great breakfast on the crisp autumn mornings. Here is the recipe that I use. This bread usually doesn’t last an hour in my house.

Ingredients:
1/2 cup butter
1 cup sugar
2 eggs
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
2 apples – cored, peeled and shopped

Preheat your oven to 350 degrees. Lightly grease an 8×4 loaf pan. Mix together the butter and sugar until smooth. Beat in the eggs. In a different bowl combine the flour, baking soda, salt and cinnamon. Mix this dry mixture into the bowl of butter and sugar mixture until all ingredients are well mixed and moistened. Fold in apples. Pour into loaf pan and bake for 1 hour.

Another great apple recipe that is enjoyed often in my house is the Apple Betty. This is a very easy recipe to make. Here are the ingredients you will need to make Apple Betty.

Ingredients:
4 cups of thinly sliced apples
1/4 cup orange juice
3/4 cup all-purpose flour
1 cup sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup butter

Preheat your oven to 375 degrees. Lightly grease a 2 quart casserole dish. Pour in the sliced apples. In a bowl mix the flour, sugar, cinnamon and nutmeg. Mix the butter with the dry ingredients until the mixture looks like course crumbs. I like to melt the butter in the microwave before mixing it with the dry ingredients. Pour this mixture over the top of the apples. Bake for 45 mins.

America’s favorite apple recipe has to be the good old Apple Pie. But who has time to make an apple pie from scratch? I know I don’t. So here’s a simpler version.

Ingredients:
2 store bought pie shells
6 cups of apples, sliced thinly
3/4 cup of sugar
1 tablespoon butter
1 teaspoon ground cinnamon

Preheat oven to 450 degrees. Combine sugar and cinnamon. Layer the apples in one of the pie crusts. Sprinkle the cinnamon and sugar mixture over each layer. When you get to the top layer drop small pieces of butter all over this layer. Cover the pie with the second pie crust. Bake on lowest oven rack for 10 mins. Reduce oven temperature to 350 and bake for another 30 to 35 mins.

A variation on the apple pie recipe would be a Fried Apple Pie but I changed it a bit so that it wouldn’t be fried any longer.

Ingredients:
2 apples
1/3 cup sugar
1/2 teaspoon ground cinnamon
1 can of refrigerator biscuits

Preheat oven to the temperture that is on the can of biscuits. Peel and dice the apples. In a saucepan combine apples, sugar and cinnamon. Cook on low heat until the mixture is soft. Mash the mixture with a fork until it is a thick applesauce consistency. Roll out each biscuit to your desired thickness. In the middle of each biscuit place a large tablespoon full of the applesauce mixture. Fold the biscuit over and press the edges closed with a fork. When all the biscuits are prepared, place them on a baking sheet and bake for the time listed on the biscuit can. These are much easier than the fried version.

A very easy and delicious apple recipe is the Baked Apple. You can do a lot with these like adding nuts and raisins and just anything you would like inside of them. For the simple baked apple version here is what you will need.

Ingredients:
4 apples
1/2 cup brown sugar
4 tablespoons of butter
2 teaspoons ground cinnamon

Preheat your oven to 350 degrees. Core the apples from the top, making sure to leave the bottom intact. Fill each apple with 2 tablespoons of brown sugar and 1 tablespoon of butter. Place the apples into a shallow baking dish and sprinkle them with the cinnamon. Bake the apples in the oven for 15 minutes or until the brown sugar starts to caramelize and the apples are tender. You can add anything you would like inside of these apples. These are great for a treat or even for a breakfast on a cool morning. My children love them.

The last apple recipe that I would like to share with you today is the Apple Cinnamon Muffin. My kids will eat any kind of muffin that I give them. But I believe this is their most favorite of all.

Ingredients:
1 1/2 cup all-purpoe flour
3/4 cup sugar
1/2 teaspoon salt
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/3 cup vegetable oil
1 egg
1/3 cup milk
2 apples
1/2 cup sugar
1/3 cup all-purpose flour
1/2 cup butter
1 1/2 teaspoons ground cinnamon

Preheat your oven to 400 degrees. Grease muffin cups or use paper liners. Peel, core and chop the apples. Mix together the 1 1/2 cup flour, 3/4 cup sugar, 1/2 teaspoon salt, 2 teaspoons baking powder and 1 teaspoon cinnamon. Mix in the oil, egg and 1/3 cup milk. Fold in the apples. Spoon the batter into the muffins cups, making sure to fill them to the top of the cups. In a seperate bowl, mix together the 1/2 cup sugar, 1/3 cup flour, butter and 1 1/2 teaspoons of cinnamon. Sprinkle this mixture over the top of the muffins. Bake the muffins for 20 to 25 minutes, until a toothpick comes out clean when inserted into the center of a muffin.
