The Chef’s Choice Knife and Scissor Sharpener uses two diamond abrasive plates on each side of the blade to medium and fine sharpen a knife blade at the perfect angle with an arch shaped knife edge. Knife edge scissors tend to be much more expensive than regular scissors and they are just as easy to sharpen.

The instructions that come with the sharpener spell out exactly how to sharpen knives, scissors, both left and right handed as well as knife edge, and other tools like axes. You can use the plates that hold onto the handle to sharpen tools like plane blades and chisels as well as knives.
