A little history about sushi:
Sushi has been prepared for centuries in Japan. It first started as a means to preserve fish. Clean raw fish was squeezed between layers of salt and pressed with a weighted stone. As it preserved it fermented. Later on in about the 18th century a chef named Yohei rolled sushi into compacted seasoned rice into decorative little packages and this was the birth to what eventually became the sushi with what we are familiar wth today. This version of sushi did not ferment, but was intended to be eaten fresh.
