Mom’s Potato Salad

My Mom’s a great cook. Well, most mothers are. But, she had this recipe, a few years back, that I just had to get from her. Potato Salad. I was just so tired of all the cute little containers in the supermarkets, all of them with lousy potato salad. Here – you try it. You’ll probably agree – it’s the best potato salad I ever had. Good warm or cold.

Recipe’ for MOM’s POTATO SALAD

12 medium potatoes, quartered and boiled
1 stick margarine
8 hardboiled eggs, chopped
2 medium onions & 3 sticks celery, diced
8 large sweet pickles, diced; or one cup sweet relish
One and a half cups mayonnaise
1/2 cup sandwich spread
1/4 cup sweet pickle juice (from the jar)
1/4 cup evaporated milk
2 tsp each: salt, pepper, garlic powder
4 tsp each: celery seed, paprika

Blend, serve and have while still warm,
and/or refrigerate remainder.
(Makes about a gallon.)
