Senior Meals in 20 Minutes
The more I age, the more I find myself desiring less time in the kitchen preparing meals. This is especially the case now that I’m divorced and without the kids half of the time when they are with their father. I’ve embraced the time and want to spend less of it in the kitchen, so I’ve found myself sticking to meals I can make in 20 minutes. I recently attended a free class where I work which covered 20 meals for seniors. I’ve used some of these ideas with time to spare and have enjoyed the meals as well.
Pan Seared Fish and Salsa
I find a nice portion of my favorite fish, which can include the more inexpensive types, or perhaps some salmon or trout. These can be easily prepared by searing them in a bit of olive oil along with some thinly sliced peppers and onion. I’ve also prepared this type of fish and topped it with a good store bought salsa for a quick and tasty meal in around 10 minutes.
Herbed/Mustard Pork Chops
This is a great meal for myself and my significant other. I start with Ã?½ inch thick pork chops and sprinkle them with salt and pepper to taste. Along side of that I’ll have a bowl of Ã?¼ cup of olive oil which includes Ã?¼ cup of parsley, a teaspoon of sage, and 2 tablespoons of honey mustard in it. I’ll then brush that combination over my pork chops and broil 5 inches from heat for 8 to 10 minutes or until meat reaches 155 degrees.
Asian Noodle Bowl
For this dish use your ramen noodle favorite. Cook it up the usual way, with cilantro and chopped green onion. Bring this combo to a boil and add the noodles as you normally would, along with some snow peas. Cook this for 2 minutes, then transfer to a bowl. To finish it off, sprinkle the top with shredded cabbage and chopped peanuts. You can add meat to this if you’d like. Diced chicken breast or shrimp work well.
Chili Topped Salmon
I eat a lot of salmon, not only because it’s has great nutrition to be had, but for the ease of preparation as well. I’ve found rubbing a pleasant mixture of the herbs, cumin, lemon pepper, dill seeds and chili powder on the top surface 4-6 ounce salmon steaks, makes a great meal. If you use about 4 salmon steaks this size you’ll need approximately 1 tablespoon chili powder, 2 teaspoons dill seeds, 1 teaspoon lemon pepper, and Ã?½ teaspoon cumin, pressed to the surface of the salmon. Next, heat up your pan with Ã?¼ cup of butter or margarine until melted, and cook your fish 5 minutes on each side, or until flaky. Serve with your favorite steamed veggie. Fast, nutritious and yummy.
