Andalusian Bean and Orange Salad Recipe

The salad here is a rich combination of beans and oranges and has an appeal that very few can resist. Utensils needed: large salad bowl, small mixing bowl

Ingredients:

-1 x 300g can cannellini beans, drained
-2 oranges, peeled and segmented
-1/2 cucumber, chopped
-2 medium vine tomatoes, deseeded and chopped
-1 green pepper, deseeded and chopped
-3 tbsp olive oil
-1 tbsp sherry vinegar
-salt and freshly ground black pepper
-pinch of cinnamon for garnish

    In the large salad bowl, mix together the beans, orange segments and other vegetables.

    Make the dressing in the small bowl. Whisk together the olive oil and vinegar to form an even solution. Season with salt and pepper. Freshly ground black pepper has an intoxicating flavor and aroma.

    Pour this dressing over the vegetables and toss well to coat it all over. Sprinkle the cinnamon over it all to make it more appealing.
