Cabbage and Carrot Salad with Spiced Yoghurt Dressing Recipe

The two main ingredients in this salad are winter favourites and combine to form a truly delectable dish. They are mixed into a spicy dressing that makes all the difference. The salad is a treat for weight conscious people as its fulfilling as a lunch or afternoon meal on its own. Both cabbage and carrots have great health benefits. Carrots are known to be rich in Vitamin A and contribute towards beautiful skin and cancer prevention. Cabbage on the other hand is rich in fibres and helps against abdominal diseases like constipation and ulcers. Imagine how miserable life would be without these colourful and delicious vegetables.

Ingredients:

– 125 g  white cabbage
– 125 g carrots

For the dressing:

– 125 g low-fat natural yoghurt
– 1 tablespoon finely chopped red onion
– 1 green chilli, de-seeded and finely chopped, optional
– 2 tablespoons finely chopped fresh coriander
– 1 teaspoon bottled mint sauce, or 1 teaspoon each chopped fresh mint and white wine vinegar
– A pinch of salt
– ½ teaspoon sugar

To garnish:

– ½ teaspoon ground cumin and ½ teaspoon paprika

    Before starting you should carefully and thoroughly  wash the entire work surface that you will be using to make this delightful salad. Be sure to also wash your hands and all the utensils that you will be using for this recipe. Remember to also wash all of the ingredients to ensure that they are completely clean. You should make a habit out of keeping your kitchen clean while preparing any type of food.

    Finely shred the cabbage first. Now grate the carrot. Combine them together in a large bowl. It is entirely up to you as to how fine you want to grate and shred the cabbage and carrots. Remember it is all about your own personal preference.

    Make the dressing now. Combine all the ingredients mentioned under the dressing part. This will include the low-fat natural yoghurt, finely chopped red onion, green chilli, finely chopped fresh coriander, some mint sauce or fresh mint and white wine vinegar. Do not forget to add the salt and sugar according to the way you like your dressing to taste. Whisk together well with a fork so that an even mixture is made and the flavours meld. You want a nice smooth texture to the dressing so keep checking the consistency while whisking with the fork.
