Colourful Coleslaw Recipe
Colorful Coleslaw Recipe is an interesting blend of flavors and textures, perfect for any kind of get-together and parties. The name for “cole slaw” is derived from a Dutch word, “koolsla,” which means “cabbage salad”. Nowadays the name of the salad is same but various versions have been discovered by experimenting with the ingredients. However, this simple recipe contains original ingredients of the Colorful Coleslaw which are easily available in the market. You can dress your Colorful Coleslaw with quick vinaigrette or just a touch of mayonnaise and it is all set for lunch or dinner.

Ingredients:
– (3 tablespoon) grainy mustard
– (2 tablespoon) honey
– (2 tablespoon or more – according to taste) fresh lime juice
– (2 tablespoon) cider vinegar
– (2 tablespoon) extra-virgin olive oil
– (½ tablespoon or more to taste) salt
– (½ cup) chopped fresh cilantro leaves
– (1 tablespoon) poppy seeds
– (¼ tablespoon or more to taste) freshly ground black pepper
– (4 cups / ¼) large head red cabbage – cored and thinly sliced
– 2 large carrots – shredded
– 1 medium fennel bulb (about 1 ½ cups) – halved, cored and thinly sliced
– 1 small red onion – thinly sliced

Take a large serving bowl in any shape that you like and set it on your kitchen table in order to mix the ingredients of Colorful Coleslaw.

Place 3 tablespoons of grainy mustard, 2 tablespoons of pure honey, 2 tablespoons of fresh lime juice, 2 tablespoons of cider vinegar, 2 tablespoons of extra-virgin olive oil, ½ tablespoon salt, and ¼ tablespoon of freshly ground black pepper in the bowl.
Note: Be very careful about the quantities of the ingredients while adding them in the serving bowel as a slight change in the proportion can bring a huge change in the taste of Colorful Coleslaw. However, you can make adjustments in the mentioned quantity of salt and black pepper according to your taste. -

Coming back to the Colorful Coleslaw, grab a large whisk and mix all the ingredients in the bowl vigorously for a few minutes.

Continue mixing until you feel that the dry ingredients absorb the liquid ones properly.

Now, cover the bowl with a plastic wrapping sheet and place it in a refrigerator for 10 to 15 minutes or until marinated and chilled well.
Note: You can also set the bowl at room temperature to marinate but make sure that the room temperature is not too high. -

In the meantime, wash the fresh vegetables including cilantro leaves, large head red cabbage, carrots, fennel bulb, and red onion.

Now, it is the time to cut the vegetables down. Take a sharp knife, place the fresh cilantro leaves on a cutting board and chop them finely.

Set the cilantro leaves on a side of the cutting board and cut the large head red cabbage into equal thin slices.

Slice the large carrots as well.

Thinly slice one medium fennel bulb and then thinly slice one red onion.

Remove the bowl from your refrigerator and top the mixture in it with the chopped vegetables.

Add in 1 tablespoon of poppy seeds.

Pick a large whisk or spoon and mix both of the mixtures well until evenly coated.

Your Colorful Coleslaw is almost ready; taste it in order to make sure it tastes good. Otherwise, you can season it with more lime juice, salt, and black pepper, if required.

Cover the bowl of Colorful Coleslaw with a plastic wrapping sheet and place it back in your refrigerator for at least 30 minutes to marinate well.
