Coriander Cucumber Salad Recipe

Fresh and flavorful Coriander Cucumber Salad truly captures the summer season when majority of you prefer light food items. Preparation Time: 30 minutes – including marinating
Serving Size: 4 to 6
Utensils: Saucepan, serving plate, stove, refrigerator, knife
Ingredients:

– 1 cucumber
– (½ cup) rice vinegar
– (2 tablespoons) sugar
– (2 teaspoons) coriander leaves
– (½ teaspoon) kosher or sea salt
– (¼ teaspoon) red pepper flakes
– Handful finely chopped fresh coriander to garnish – optional

Instructions

    Select a fresh cucumber; wash it well and then cut it into equal thin slices with a sharp knife.

    Place the cucumber slices on a plate and set it aside until you mix the remaining ingredients of the Coriander Cucumber Salad.

    Pick a small saucepan and place it on your stove over medium heat.

    Place 2 tablespoons of sugar and ½ teaspoon of salt in the pan. Stir both ingredients over heat for at least three minutes until they dissolve and mix completely.

    Now, switch off your stove, remove the saucepan from heat and let it cool to room temperature for approximately 10 minutes.

    Once your sugar-salt solution is chilled, carefully pour it over the cucumber slices on the plate.

    Note: Remove the water released by the cucumber slices before pouring in the salt-sugar mixture.

    Set your Coriander Cucumber Salad in the refrigerator to marinate for about 20 to 30 minutes.

    Meanwhile, take fresh leaves of coriander, hold them together and chop them with a knife.

    Take out your Coriander Cucumber Salad from the refrigerator and garnish it with the chopped coriander. Enjoy!
