Cucumber and Yoghurt Salad Recipe

Cucumber and Yogurt Salad is one among the most refreshing complement to your course of fish or meat. Moreover, you can use this delicious dish as a filling for your pita breads. As the name represents, cucumber is the main element of the salad, which is a rich source of fiber, minerals and vitamins—mainly vitamin C.

Traditionally, this salad is prepared with grated cucumbers instead of chopped ones. This simple and easy-to-make recipe of Cucumber and Yogurt Salad is enough for seven people, though; you can increase the quantity of ingredients according to your requirement.

Ingredients:

– 3 cucumbers
– 2 cloves garlic, minced
– Salt to taste
– 2 tablespoons dried mint
– 1 cup plain yogurt
– 1 tablespoon olive oil

    Wash the three cucumbers properly and peel them lengthwise with a sharp knife. Now, cut then into thin slices and layer them in a medium salad bowl.

    Sprinkle the layered cucumber slices with salt, toss them properly and let it stand at room temperature for approximately 15 to 20 minutes.

    Meanwhile, grab two cloves of garlic and peel them. Place the garlic cloves in a mortar and mince them with a pestle.

    Place the minced garlic in medium mixing bowl and top it with 1 cup of plain yogurt and 2 tablespoons of dried mints. Whisk the yogurt until mix with the mint and smooth.

    At this time, blend in a drizzle of 1 tablespoon of olive oil, if you like.

    Pour off the water released by the cucumber slices in the salad bowl, pressing the slices firmly.
