Easy Black Bean Burger Recipe

Burgers are an answer to many of our hunger pangs and cravings. While the combination of black beans and burgers might appear a bit ill-fitting, in reality they make an awesome duet of great taste and presentation. Black beans are not only a healthy source of proteins, they are also great in taste and make a yummy filling for a burger. Beans combined with the crunchy Bulgur wheat can make you fall in love with the recipe and what it creates. This is the kind of recipe that makes the kids jump with excitement, the neighbours pass envious looks and the friends beg you for a copy.

Ingredients:
Medium-grind bulgur: 1/2 cup
Coarse salt and ground pepper
Pinto beans, rinsed and drained: 1 can (14 1/2 ounces)
Plain dried breadcrumbs: 1/4 cup
Scallions, thinly sliced: 4
Egg: 1 large
Carrot, coarsely grated: 1 large
Cayenne pepper: 1/4 teaspoon
Tahini (sesame-seed paste): 2 tablespoons
Vegetable oil: 3 tablespoons
whole-wheat english muffins, toasted: 4
Tahini Mayonnaise
Lettuce

    Take the bulgur in a mixing bowl and mix with 1/4 teaspoon of salt. Boil a cup of water and pour it over the bulgur. Cover the bowl and let the water soften the wheat. This will take around half an hour. Drain off the water in a sieve when the wheat goes tender. However, it should still have its chewy texture. Press the wheat in the sieve to get rid of all excess water.

    Place the beans in another mixing bowl while the bulgur is softening up. Mash them into a paste form using a masher. Add paste the breadcrumbs, scallions, carrot, cayenne, egg, tahini, and bulgur. Season with salt and pepper according to taste. Use freshly ground pepper if possible. Combine everything well together so that a smooth mixture is formed.

    Make four patties out of this paste.  Warm oil in a  skillet and roast the patties on each side until they are brown and cooked. Give each side 5 to 8 minutes. Serve the patties on the muffins. Garnish with mayonnaise and lettuce leaf. A wonderful treat for the four people who feast on these burgers.
