Onion, chopped - 1 large
Chopped celery - ¼ cup
Garlic cloves, minced - 4
Vegetable oil - 2 teaspoons
Chopped, seeded and peeled tomatoes - 1-1/2 cups
Water - 1 cup
Bay leaves - 2
Strip orange peel (about 2 inches x 1 inch) - 1
Minced fresh parsley - 1 tablespoon
Salt - ¾ to 1 teaspoon
Dried thyme - ¼ teaspoon
Coarsely ground pepper - ⅛ teaspoon
Dash cayenne pepper
Catfish fillet or firm whitefish of your choice (about ½ pound), cubed - 1
Instructions
Put all the ingredients in a large bowl and mix them well.
Add the spices and salt.
Marinate the catfish with the mixture.
Take a saucepan and put some onions before sautéing its layers.
Put garlic and tomato in it and stir together.
Stir in catfish and bring it to boil.
