Fruity Brussels Sprouts Salad Recipe

The Fruity Brussels Sprouts Salad is amazing for summer outings, as part of party buffets or just about any time. Thinly sliced Brussels sprouts are nicely tossed in extra virgin olive oil and fresh lemon juice. You will surely find this recipe very easy to prepare and just scrumptious, making 2 to 4 servings. Ingredients:

– 1 ½ pound Brussels sprouts
– 1 fresh apple- diced (Granny Smith Apple is preferred)
– 1 carrot- peeled and grated
– 1 cup toasted pecans
– ¼ cup extra virgin olive oil
– 3 tablespoons fresh lemon juice
– ½ cup dried cranberries (also known as craisins)
– 2 tablespoons shaved Parmesan
– Course ground salt and pepper

    Prepare the Brussels sprouts

    First of all grab the Brussels sprouts, cut of their stems with a sharp knife and halve them. Now, separate each layer and place them in a large serving platter.

    Note: The middle layer of Brussels sprouts won’t separate. Therefore, set the middle layers aside for other use or simply chop them to add to the salad.

    Toss together the ingredients

    Pick a bowl and place the thinly diced apple, grated carrot, and thinly diced apple. Add in chopped and toasted pecans, parmesan and dried cranberries. Toss all these ingredients until mixed well. Spoon this mixture to the Brussels sprouts in the large serving platter and set aside.

    Prepare the dressing

    Take another bowl and pour in the olive oil and lemon juice. Top with salt and pepper to taste. Mix the ingredients until they form a smooth dressing.

    Add dressing to the salad

    Drizzle the dressing over the salad in the platter and toss the ingredients to coat completely.
