Cut fresh green beans (1-1/2-inch pieces): 2 cups
Small red potatoes, quartered: 1-1/2 pounds
Chicken broth: 1 can (14-1/2 ounces)
Garlic clove, peeled and halved: 1
Cider vinegar: 3 tablespoons
Olive oil: 3 tablespoons
Minced fresh tarragon: 1 to 1-1/2 teaspoons
Ground mustard: 1/2 teaspoon
Garlic clove, minced: 1
Minced fresh parsley: 1 tablespoon
Creole or Cajun seasoning: 1/4 teaspoon
Salt: 1/2 teaspoon
Pepper: 1/4 teaspoon

Take a saucepan, put potatoes and garlic in it and cook them in boiling water (salted) for around 5 minutes. Then, add beans and cook them for around 10 to 14 minutes (or until the time when the vegetables become softer). After cooking, drain the vegetables (discard the garlic) and place them in a bowl.

Take the warm broth and pour it over the vegetables in the bowl. Cover the bowl and put it in the refrigerator for at least two hours after stirring.

Now, take a small bowl and put oil, seasonings and vinegar into it. Mix all the ingredients well, then drain the vegetables and add the dressing. After adding the dressing, toss to coat.
