Green Beans and Celeriac in a Stir Fry Dressing Recipe

Utensils needed: Frying pan, heat proof bowl, mixing bowl, salad bowls
Ingredients:
– 300g celeriac, cut into thin slices like match sticks
– 300g green beans
Dressing:
– 1 tablespoon olive oil
– 1 tablespoon sesame oil
– 2 red chillies, de seed them and slice into thin pieces
– 4 garlic gloves, chopped
– 1 tablespoon grated ginger
– 1.5 tablespoon honey
– 2 tablespoon soy sauce
– 5 tablespoon vinegar
– Fresh coriander sprigs for garnishing

Steam the Celeriac for a minute and then add the green beans. Steam for another five minutes or until they are tender but still firm to the touch. Remove them to a heat proof bowl and prepare the dressing next.

In a pan, heat the olive and sesame oils. Stir fry the chili, ginger and garlic over high heat. Be careful and do not let the vegetables burn. When they start to show brown, add the honey, soy sauce and vinegar and boil for another two minutes to form a thick paste.

Add this dressing to the peas and Celeriac now. Stir together and let the mixture stand for around two hours. When serving, add the coriander sprigs as garnish. It is time for a hearty and healthy meal.
