Homemade Caramel Ice Cream Recipe
Caramel ice cream is famous among people of all age group. You can make this frozen dessert on any occasion to entertain your family, friends, and colleagues. Caramel ice cream, inspired by London’s chef Simon Hopkinson, contains useful ingredients. This recipe makes six servings. You can decorate caramel ice cream in numerous to make it more yummy and attractive towards your guests. However, you can associate it with different occasions as well. Try this easy and simple recipe to entertain your guests in your upcoming party:
Preparation Time: 45 Minutes (plus chilling and freezing time)
Ingredients:
8 egg yolks
(350ml)
(250g) caster sugar
1 split vanilla bean
(300ml) thick cream
(2 tablespoon) cold water

Take a small saucepan and add 350ml milk to it, heating at medium heat. Meanwhile, take a medium bowl and place 8 egg yolks (yellow part) in it. Now gradually whisk the egg yolks and pour it over the boiling milk. Stir this egg-milk mixture well and set it aside at room temperature until cool.

Take another saucepan and add 250g caster sugar and 2-tablespoon cold water to it. Boil it at low heat and stir until the sugar dissolve. Now gradually increase the heat to medium until the sugar mixture start to turn a rich golden colour. Add in vanilla bean and cook the mixture for few more seconds. Make sure that your mixture did not get too dark as your ice cream can get very biter in such situation.

Now, gradually pour in the 300ml thick cream. You really have to be careful while pouring in the thick cream, as it will splatter a lot and lumps will be formed. Reduce the heat to low and stir your mixture until the lumps of the caramel melt. When your caramel mixture smooth, gradually stir in the egg mixture. Continue stirring and cooking until your mixture thickens.

Grab a sieve and strain the mixture through it in order to remove the possible lumps of the caramel. Pour this mixture into a shallow container and place it in your freezer of refrigerator until frozen at the edges of the mixture.

Remove the mixture from freezer or refrigerator and beat it with the help of an electric beater. Pour your mixture back to the shallow container and refreeze it. Repeat the same procedure for 2 to 3 times.

Your Caramel ice-cream base is almost ready, cover it properly and place it in refrigerator for approximately 3 hours until chill or overnight. Once your ice cream base is chilled, you can freeze it an ice cream maker.

Delicious Caramel ice cream is ready you can serve it immediately or you can also freeze it for 1 week if you want to enjoy it for long.
