Ingredients:
Extra virgin olive oil: 2 tbsp
Unsalted butter: 1 tbsp
Chuck roast: 1 3lb
Kosher salt
Freshly ground black pepper
Yellow onion, finely minced: 1
Carrot, peeled and finely minced: 1
Stalk celery, finely minced: 1
Cloves garlic, chopped: 2
Can plum tomatoes, drained and chopped, liquid reserved: 1 28 oz
Red wine: 2 cups
Golden raisins: 1/2 cup
Pine nuts: 1/2 cup

Mix together fennel seed, parsley, Italian seasoning, garlic salt and 1 tablespoon pepper. Now apply that mixture to the meat.

Brown the pork roast in an oven or large pot with heated oil in it. Now pour ¾ cup of water over the pork and cook it on 325 degree F in an oven. After 1 ½ hour you will place vegetables around the roast and let the oven work for another 50 minutes.
