How to Make a Burrito Bowl

Burrito bowl is one of the most delicious and nutritious dishes. It makes a perfect meal for lunch or supper. Besides, it can also be served at family get together and other parties.

Yield: 4 servings
Utensils: Mixing bowls, cutting board, sharp knife, saucepan, spoons, fork, whisk, baking sheet and spatula.

Ingredients:
Cooked white rice: 3 cups
Chopped fresh cilantro: 2 tbsp
Orange zest: 1 tbsp
Cooked black beans: 2 cups
Simple Fresh Pico de Gallo (recipe follows): 1 1/2 to 2 cups
Pork Carnitas (recipe follows): 2 cups
Shredded Cheddar: 1 cup
Sour cream: 1/2 cup
Green onions (chopped): 2

Easy Pico de Gallo:
Salt: To taste
Sugar: 1 pinch
Medium tomatoes (seeds removed and chopped) : 2
Medium sweet onion (finely chopped): 1/2
Jalapeno (ribs and seeds removed, finely chopped): 1
Avocado (halved, pitted, peeled and cut into small cubes): 1
Lime (juiced): 1
Chopped fresh cilantro: 3 tbsp

Pork Carnitas:
Boneless pork shoulder: 2 pounds
Salt and freshly ground black pepper: To taste
Dried oregano: 2 tsp
Ground cumin: 1 tsp
Olive oil: 1 tbsp
Onion (coarsely chopped): 1
Garlic (minced): 4 cloves
Jalapeno (seeded and ribs removed, chopped): 1
Orange (cut in half): 1
Vegetable oil: 3 tbsp

Instructions

    First of all, take a medium bowl and put in it the orange zest along with the rice. Then, add cilantro in the bowl and mix all the ingredients well with each other. Take four serving bowls and divide the rice mixture evenly amongst them.

    Take another small bowl and mix 1 teaspoon of salt with a pinch of sugar in it. After that, take a medium bowl and put the tomatoes in it. Then, add onion and jalapeno. Sprinkle the cilantro after placing the avocado on top of the mixture. Your pico de gallo is ready.

    To prepare the carnitas, clean the meat first. Then, cook the meat along with onion, jalapeno and garlic. You can cook it in any vegetable oil. After cooking, add the orange juice on it.

    Put the pico de gallo on the rice mixture which you had placed in the bowls in step 1. Add the black beans and use the carnitas as topping. In the end, sprinkle some cheese or sour cream and green onions. Serve along with cold drinks.
