How to Make a Delicious Sausage Egg Burrito

Ingredients:
Large eggs: 3
Whole milk: 2 tablespoons
Baby Bam spice: ½ teaspoon
Salt: 1/8 teaspoon
Extra virgin olive oil: 1 teaspoon
Unsalted butter: 1 teaspoon
Crumbled breakfast sausage: ½ pound
Green bell pepper (chopped): ¼ cup
Grated cheese: ¼ cup
Flour tortillas: 2 (about 8-inch each)
Emeril’s Original salsa (optional): ½ cup
Green onion tops (optional): 2 tablespoons

Wash the ingredients properly and your hands as well. You will also want to clean the utensils and the entire work area of your kitchen that you will be using. Crack the three large eggs into a medium bowl – one by one. Use a fork or small whisk to beat the eggs until they are watery and foamy.

Stir in 2 tablespoons of whole milk, half teaspoon of baby bam spice and 1/8 teaspoon of salt. Continue blending until the salt dissolves and the other ingredients mix together properly. Now set this mixture aside.

Pour 1 teaspoon of extra virgin olive oil into the centre of a medium non-sticking skillet and place it on stove, setting it at medium-high range.

Wait for few minutes until the oil is warm and then add in 1 teaspoon of butter. Stir it with a wooden ladle until it dissolves completely.

Now add in half pound crumbled breakfast sausage and stir cook it for few minutes. Carry on stirring and frying until the sausage breaks up into bite-sized pieces and that the colour changes from pink.

Add in the ¼ cup of the chopped green bell pepper and continue cooking for another one to two minutes.

Stir in the whipped eggs and use a wooden ladle to keep on stir cooking for 30 seconds or until the eggs are set well.

Scatter the mixture with ¼ cup of grated cheese and remove the skillet from the heat. Place it on a smooth surface of the kitchen counter top and let it rest for 30 to 40 seconds until the cheese melts thoroughly.

Arrange the two warm tortillas on a large tray and spoon half of the filling down the centre of each of them.

Carefully roll up the tortillas in the burrito-style and arrange them on a large serving plate with their seam side down in order to keep them closed.

Top the tortillas with half cup of salsa and garnish with some slices of onion – if you like.
