Fall calls for a special cake with ripe juicy and sweet apples. Apples taste great not only fresh but also in pies and cakes. If you have extra ripe apples left, it is best to make a cake out of them and preserve the taste and freshness. An apple cake is easy to make, ready in an hour and can be used for long.
Ingredients
  • Vegetable oil: 1⅓ cups
  • All-purpose flour: 3 cups
  • Ground cinnamon: 1 tablespoon
  • Baking soda: 1 teaspoon
  • Salt: 1 teaspoon
  • Sugar: 2 cups
  • Eggs: 3 large
  • Granny Smith apples, cored and cut into ½-inch pieces (3 cups): 3 to 4
  • Chopped assorted nuts, such as pecans and walnuts (optional): 1 cup
  • Pure vanilla extract: 1 teaspoon
Instructions
  1. Preheat your oven to 350 degrees so that it is warm and ready to receive the batter when you prepare it. Spray the cooking pan. You can also manually grease it and then spread a layer of flour to achieve the same purpose, i.e to prevent the cake from sticking to the pan and help it come out easily.
  2. Sift together the flour, cinnamon, baking soda, and salt so that they mix in well. Do this over a large sheet of parchment paper. Gather the sifted ingredients in the center of the paper, easy to be gathered.
  3. Use an electric mixer to blend together vegetable oil, sugar, and eggs. Pour in the ingredients in parchment paper slowly in to the mixer, preventing any lump formation. Add apples to the mixture. You can also add nuts to make the cake richer and crunchier.
  4. Pour the batter into the prepared pan. Place in the pre-heated oven and bake for 90 minutes or until the top surface is brown. If a toothpick inserted in the center comes out clean, your cake is ready. Take out and cool on a wire rack.
