Onions: 2 whole
Carrots: 6 whole (Up To 8 Carrots)
Salt: To taste
Pepper: To taste
Red wine (optional, You Can Use Beef Broth Instead): 1 cup

Fresh thyme: 3 sprigs, or more to taste
Fresh rosemary: 3 sprigs, or more to taste

Instructions

  • 1

The first step is to choose a neat and clean piece of meat. It should be marbled nicely as this will affect the flavor of the roast. Season the chunk generously with salt and pepper. Set the stove on medium high and put a large pot. Add butter or 3 tablespoons of olive oil in it.

Cut 7 carrots in slices and 2 onions half length, peeling the carrots is not necessary. When the oil has become very hot, add the onions, let them brown on both sides and then put them on a plate. After that, put the carrots in and let them cook until brown, this will take around a minute.

Add some more oil in the pot if needed. Put the meat chunk in the hot pot and let it brown on all sides evenly. This will also take around a minute. Set the roast aside on a plate. Let the heat remain high and pour in 1 cup of beef broth. This will help in deglazing the pan.

After the pan has been deglazed, put the meat chunk back in and add more broth to cover the roast halfway. This will be around 3 cups. Add the carrots and onions and some fresh thyme and rosemary. Cover the roast and let it cook at 275 degree. It will take between 3 to 4 hours. The roast will be tender with some gravy around when it is ready.
